Now, this one seems eager, but that she mentions a different game makes me skittish about swinging the RP hammer too soon. When's a good time - now, when she doesn't know up from down, or later, when she's learned stuff, perhaps a bit of lore, and looks like she's here to stay?

You should teach the novice the difference between in character and out of character right away. Also tell them that if they have any out of character comments or questions, they can ask you in tells.

In aethercraft, at Mythical (5% is what I'm at now), should I have Captain? I had it before ForceField was put in. Did ForceField push Captain up higher a bit?

I normally tell them to avoid those kinds of comments, but that there will be a bit more flexibility since they're new.
Trust me, I know the pickle. I don't want to scare kids off, but I don't want the guild or city looking bad because they don't know this is a role-playing game.

I'm trying to figure out why I have to get enemied to gnomes for "free" lessons. Paying gold to rectify enemy status is not free!
