There are only three. And yes, they got to pick their names (the entire world is frozen and nobody can do -anything at all- while they decide if they want a new name. So do try not to be hunting an NPC or be around aggressive ones when that happens)

Yeah, haymaker is only really effective against people who you don't need it to be effective against... can mangle them good, though, especially if they haven't got enough resilience to shrug your poisons (or die outright).

This, it was once believed each sperm contained a homunculus that then grew in the womb. And all Homunculus means is miniature human and can be used for any representation of a human. In alchemy there was the idea of creating a artificial human,a homunculus, which is what that mob is probably based on.

"Little people who live in the head" is another historical conception though, which is where philosophical accusations of an argument relying on homunculi come from...there's also the psychological usage of a rather oddly proportioned man representing the emphasis the brain gives sensory input from the various parts of the body.
